The only thing better than one dessert is two desserts!

We think our Cookies ‘n’ Cream Cupcake is pretty great on its own – a moist chocolate and vanilla cupcake, with light, whipped vanilla “buttercream” icing swirled with decadent double chocolate chip cookies pieces. Summer tastes like fresh berries, and the berry-lovers out there will love what we’ve been busy making. It’s the Berry Pie Crumble Square, and here’s how we do it:

First, we roll out an organic spelt flour crust



We mix together some juicy wild blueberries, strawberries and raspberries, stir in a little bit of organic evaporated cane juice, and spread the berries evenly over the crust.


Next, we cover the berries with a topping of organic rolled oats and cinnamon.


And make sure that the topping is easily spread.


Finally, we bake it, cut it into pieces, and enjoy.


Of course, you only need to do the “enjoy” part.

Our favorite way to enjoy them is to first remove the cookie, dunk it into the icing, and enjoy (saving some icing for the cupcake, of course).
